At One Bistro, the unique restaurant within Four Points by Sheraton Norwood, Chef Tyler Clegg is offering his clients much more than great food and a relaxing environment. He is delivering flavors and intriguing, seasonal meals from fresh ingredients, all cultivated and grown locally.
"I change the menu often," Chef Clegg said. "I bring in influences from all around the world."
His insight for his continually flourishing menu? That comes from virtually everywhere, anytime.
"My options are limitless," Chef Clegg said. "I am inspired by everything; colors, nature. I'm thinking about it [the menu] all night and into the morning. If I'm looking at a fire, I think, 'what if we were to cook over an open fire instead of a grill, how would that change the flavor? Food is always changing. We push through the boundaries."
Chef Clegg's commitment to his quality and diverse menu options is a 24-hour job, and one he doesn't take lightly. In addition to personally brainstorming and consulting his staff for creative meal options, he goes straight to the source by partnering with local farms, specifically Ward's Farm, in Sharon. From spring through fall, he personally visits the farm a few times per week, not just to choose the best produce, but to learn all aspects of the food he will soon transform into delicious dishes.
"They teach me the scientific side of growing vegetables and farming techniques," Chef Clegg said. "It's not just cooking, but how it is grown. It is fascinating to me."
Chef Clegg received his culinary training at the acclaimed Le Cordon Bleu in Boston. He applied those skills for three years in Boston restaurants until he joined One Bistro approximately five years ago as a line cook and worked his way up in the kitchen before becoming the head chef. Twelve to 14 hour days are typical, but his efforts, combined with the talents and drive of his staff, are evident by the loyal customers that regularly patron the popular Norwood restaurant.
"I love food," Chef Clegg said. "I love the adrenaline rush on a busy night and the teamwork. I'm constantly busy, long hours, long days. That's my life and I love every second of it."
For nearly 15 years, One Bistro has brought the fine taste and quaint setting of a small bistro restaurant where menu choices fluctuate daily and seasonally incorporating only fresh, high quality ingredients. The eclectic and creative menu features French, American and New England influences, all prepared to order and always delicious. The crab cakes and seafood chowder are recurrent fan favorites and popular starter choices, but aged brie with marinated blueberries, sea scallops or croquettes are just a few examples of the fall appetizers. For the main course, options include filet mignon, lamb ribs, duck breast, shrimp scampi, salmon, risotto or a vegetarian dish. For a lighter fare, salads, burgers or pizza are also offered on the menu.
Out for a family dinner or brunch? The kids menu offers a great selection and the Sunday brunch menu is a great way to start a leisurely day with crab cake Benedict, a frittata, banana stuffed French toast, an omelette or cinnamon crusted pancakes!
The full bar at One Bistro is equally innovative as the restaurant offering a wide variety of signature cocktails as well as a great wine (even half bottles) and beer selection. It is a great place to catch up with co-workers or friends or relax to watch the latest game on tv!
"I want customers to have an experience," Chef Clegg said. "If you are hanging around, you are having a good time. We are the only place like this."
One Bistro is open daily for lunch Monday-Saturday, 11:30 a.m.-3 p.m., and dining Sunday-Thursday, 5-10 p.m., (with a lighter fare menu 10-11 p.m.), and Friday and Saturday 5-11 p.m. The bar is open daily until midnight and Sunday brunch is served 11 a.m.-2:30 p.m. Walk-ins are welcome, however reservations are suggested for weekend evenings and Sunday brunch.
